Recipe for Christmas Biscuits

Ingredients

175g butter, softened

100g caster sugar

1 medium egg yolk

250g plain flour

Icing

Silver balls and ribbon

Method

1) Beat the butter and sugar until creamy. Beat in the egg yolk and add theflour and mix to a smooth dough.

Gather together with your hands, wrap in cling film and chill for 30 minutes.

2) Preheat the oven to 180°C/ 160°C fan/gas mark 4. Line two baking trays with baking paper.

3) Roll out the dough between two sheets of cling film to the thickness of a£2 coin. Cut out into stars or trees or just rounds and put on the baking trays, leaving a small gap around the biscuits. If they are to be hung on the tree make a small hole for the ribbon.

4) Bake for 15 mins, leave for 10 mins and then cool on a wire tray. Pipe or drizzle some icing onto the biscuits and decorate with silver balls. Allow the icing to set before storing.
