Ingredients:
200g self-raising flour
1tsp baking powder
A pinch of salt
1 egg
300ml milk
A knob of butter
150g blueberries
1tsp rapeseed oil
Optional - golden / maple syrup

- Firstly, mix the flour, salt and baking powder in a large bowl.
- Secondly, whisk the egg and milk together.
- Next, make a hole in the centre of the dry mixture and whisk in the wet ingredients until the batter is smooth.
- Then, melt the knob of butter and stir it into the mixture, along with half the blueberries. Be careful not to break the fruit.
- Now, heat the oil in the frying pan until hot and drop a tablespoon of batter into the pan. Make 3 or 4 pancakes at a time.
- Once bubbles start to appear on the pancakes, flip them over with the spatula and cook for another 2 or 3 minutes until golden brown.
- Serve with maple or golden syrup and the rest of the blueberries.
