Lemon Madeleines

40 Gms (You can also use coconut oil if you want a vegan version)

100 ml milk

1 Tbsp Lemon Juice

60 Gms Super Fine Sugar

1 tsp Vanilla

75 Gms Almond Flour

75 Gms all purpose Flour

1 tsp baking Powder

Method:

1. Melt the butter on a low flame. Let it cool down. Add it to a bowl and now add milk, lemon juice, vanilla essence, lemon zest and sugar. Mix everything well.

2. Now sift in the flour and baking powder into the batter and mix until well combined. Refrigerate the batter for about 10 to 15 mins but no longer.

3. Make sure you grease your pan with butter. Now pour 1 scoop of the batter into each shell. Bake in a preheated oven for about 15 to 18 mins at 180 degrees.

4. They taste perfect when eaten warm straight out of the oven.

5. Top it with some confectioner's sugar and you are good to go.
