Billys Lemon Drizzle cake


200g self raising flour

200g stork margarine/unsalted soft butter

200g caster sugar

4 eggs

1 teaspoon baking powder

zest of 2 lemons

juice of 1 lemon


put all ingredients into a mixer and whisk until combined and smooth

bake in a 2lb baking tin for 35-40 minutes at 180, slightly less for a fan


while cooking make the drizzle

juice of 2 lemons & 5 table spoons of icing sugar, mix together until smooth


remove from cake from the oven and while still warm drizzle over the juice
