My macarons

We made macarons last night. They were chewy and filled with strawberries and cream. They were soooo delicious!


If you want to make some too, here is a recipe!


Ingredients

  • 100g icing sugar
  • 75g ground almond
  • 2 large egg whites (at room temperature)
  • 75g granulated sugar


For the filling

  • 200ml double cream
  • 5 - 10 large strawberries


1- Preheat oven to 150c (with the help of a grown up!)

2- in a food processor, whizz together the almonds and icing sugar until very smooth

3- in a bowl, whisk the egg whites until they're very stiff (shouldn't fall out of the container if you hold it upside down!)

4- while whisking, add the granulated sugar a little at a time, whisking well between additions

5- The meringue mixture (egg whites and sugar) should be very stiff at this point.

6- now gently fold in the almond mixture one spoonful at a time until just incorporated

7- Transfer the macaron mix to a piping bag. You can put the bag in a bowl to keep it upright whilst you fill it.

8- pipe into neat circles on a wax paper covered baking tray.

To make it easier you could draw circles on your baking paper as guides to help you.

9- Bang the baking star down on the table a few times

10- Let the macarons rest for 45-60 minutes before you bake them. They should form a smooth surface that doesnt stick to your finger.

11- Now BAKE! in the middle of the oven for 18-20 minutes until the surface is firm. Test one shell, if you put your finger in it, the shell should crack.

12- Let it cool completely for around 20 minutes then transfer to a wire rack to cool completely.

13- while waiting, whisk the cream until a thick soft whip forms.

14- Transfer the cream to a piping bag , snip the top if you dont have a nozzle.

15- Pipe a blob of cream on the flat side of the macaron. Slice the strawberries and put one or two and then close with another macaron on top.

16- Serve immediately! ENJOY!!!
