Method





1. Pour 900ml chicken or vegetable stock into a pan , add one boneless skinless chicken , 1 tsp of fresh root ginger and 1 finely chopped garlic clove .


2.Bring to the boil , then reduce the heat , partly cover and simmer for 20 mins , until the chicken is tender.


3.Remove the chicken to a board and shred into bite-size pieces with a fork.


4.Return the chicken to the stock with 50g noodles , 2 tbsp sweetcorn and 2 shredded spring onions .



5.Simmer for 3-4 minutes until the noodles are tender .



6.Ladle into the bowls and scatter the shredded onion .
